Instructions

  1. Warm your oven to 350°F and coat a 9×13-inch baking dish with cooking spray.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Sauté 1 cup chopped onion and 1 pound ground beef until meat browns and onions soften. Drain any excess fat.
  3. Fold 6 cups sliced zucchini and 1 cup shredded carrots into the beef mixture, stirring thoroughly.
  4. Melt ½ cup butter and blend it with 12 ounces herb-flavored stuffing mix in a separate bowl.
  5. Whisk 1 cup sour cream, 1 can cream of celery soup, and 1 can cream of onion soup until completely smooth.
  6. Create layers in your baking dish: spread beef and vegetable mixture first, drizzle creamy soup mixture over top, sprinkle stuffing mix, and crown with 1 ½ cups shredded Italian cheese.
