Instructions

  1. Heat your oven to 400°F with the rack in the middle position.

  3. Sprinkle salt and pepper generously across every chicken surface.
  4. Arrange chicken skin-side down on a rimmed baking sheet, ensuring pieces do not touch.
  5. Roast for 25 minutes until skin begins to turn golden.
  6. Increase oven temperature to 425°F.
  7. Remove chicken and brush ½ cup BBQ sauce over top surfaces.
  8. Carefully flip chicken pieces with tongs.
  9. Brush another ½ cup BBQ sauce on the second side.
  10. Return to oven for 7 minutes.
  11. Remove and apply another ½ cup BBQ sauce, flipping chicken again.
  12. Bake for another 7 minutes.
  13. Apply final ½ cup BBQ sauce and return to oven for last 7 minutes.
  14. Check internal temperature reaches 165°F using a meat thermometer.
  15. For extra crispy skin, switch oven to broil and cook 3-5 minutes until edges caramelize.
