Instructions

  1. Warm 2 tablespoons olive oil in a large skillet at medium-high heat. Sauté 1 diced onion and 1 diced bell pepper for 3-4 minutes until vegetables become tender.
  2. Add 1 lb ground beef to the skillet. Cook 6-7 minutes, crumbling meat until no pink remains. Drain excess fat.
  3. Sprinkle 1 packet taco seasoning over beef. Stir and cook 1 minute to develop flavor.
  4. Pour in 1 can black beans, 1 can corn, and 1 can diced tomatoes. Mix thoroughly with beef mixture.
  5. Preheat oven to 375°F. Lightly grease a 9×13 inch baking dish.
  6. Arrange 3 corn tortillas across bottom of dish, slightly overlapping edges.
  7. Spread half the meat mixture evenly over tortilla layer. Scatter 1 cup shredded cheddar cheese on top.
  8. Layer remaining 3 tortillas over cheese. Cover with remaining meat mixture.
  9. Sprinkle final 1 cup shredded cheese across the top.
  10. Bake 20-25 minutes until cheese melts completely and edges turn golden.
  11. Remove from oven. Rest 5 minutes to set casserole.
  12. Garnish with 1 cup sour cream, ½ cup salsa, and ¼ cup chopped cilantro before serving.
