Description

Taco Bake delivers hearty Mexican-inspired comfort straight to your dinner table with cheesy, spicy layers that come together faster than ordering takeout. Packed with ground beef, tortillas, and zesty seasonings, this casserole turns weeknight meals into a delicious fiesta your family will devour.

Ingredients

Scale

Main Protein and Grains:

  • 1 lb ground beef
  • 6 corn tortillas
  • 1 packet taco seasoning

Vegetables and Beans:

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • ¼ cup chopped green onions

Dairy and Toppings:

  • 2 cups shredded cheese
  • ½ cup sour cream

Instructions

  1. Warm your oven to 350F, ensuring the rack sits in the center position.
  2. Grab a large skillet and thoroughly cook 1 lb ground beef until no pink remains.
  3. Pour the entire taco seasoning packet into the skillet with the beef.
  4. Add 1 can of drained black beans, 1 can of drained corn, and 1 cup salsa to the meat mixture.
  5. Simmer the mixture for 5 minutes, stirring occasionally to blend flavors.
  6. Grab a 9×13 inch baking dish and create the first layer using 3 corn tortillas.
  7. Spread exactly half the beef mixture across the tortilla base.
  8. Sprinkle 1 cup of shredded cheese over the beef layer.
  9. Create a second identical layer using remaining 3 tortillas, beef mixture, and 1 cup cheese.
  10. Slide the casserole into the preheated oven and bake for 25 minutes until cheese melts completely.
  11. Remove from oven and let the dish rest for 5 minutes to set and cool slightly.
  12. Garnish with ½ cup sour cream and ¼ cup chopped green onions before serving.

Notes

  • Swap ground beef for ground turkey or plant-based crumbles to make the dish lighter and healthier.
  • Experiment with different cheese varieties like pepper jack or Mexican blend for added flavor complexity.
  • For extra crispiness, briefly toast the tortillas in a dry skillet before layering them in the baking dish.
  • Add a handful of chopped cilantro or fresh jalapeños on top for a burst of fresh flavor and extra kick.
