Description

Chicken and Asparagus Casserole brings pure comfort straight from grandma’s kitchen to your dinner table. Creamy, cheesy goodness combines tender chicken and fresh asparagus for a simple weeknight meal that feels like a warm hug.

Ingredients

Scale

Main Ingredients:

  • 2 ½ cups chopped cooked chicken
  • 1 (8-ounce) package medium egg noodles, cooked
  • ½ pound fresh asparagus, trimmed and cut into pieces

Supporting Ingredients:

  • 1 (8-ounce) package sliced fresh mushrooms
  • 2 handfuls baby spinach leaves
  • ½ cup diced onion
  • 2 green onions, green parts only, sliced

Seasoning and Liquid Ingredients:

  • 3 cups chicken broth
  • 1 (8-ounce) carton whipping cream
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • ½ cup shredded Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Heat your oven to 350°F and coat a 9×13-inch baking dish with cooking spray.
  2. Melt ¼ cup butter in a large skillet over medium heat. Sauté 8 ounces of sliced mushrooms and ½ cup diced onion for exactly 5 minutes.
  3. Add ½ pound trimmed asparagus pieces to the skillet. Cook for 3 minutes until slightly tender.
  4. Dust ¼ cup flour over the vegetables, stirring to coat completely. Gradually pour in 3 cups chicken broth, then stir in 8 ounces of whipping cream.
  5. Simmer the sauce for 3-5 minutes until it thickens. Blend in 1 teaspoon salt, ½ teaspoon pepper, and ¼ cup Parmesan cheese.
  6. Toss 2 handfuls of baby spinach, 2 sliced green onion tops, 2 ½ cups chopped chicken, and 8 ounces cooked egg noodles into the sauce.
  7. Transfer the mixture to your prepared baking dish. Scatter remaining ¼ cup Parmesan cheese across the top.
  8. Bake uncovered for 20-25 minutes until the casserole bubbles and develops a golden surface.
  9. Allow the casserole to rest 5 minutes before serving to help it set and cool slightly.

Notes

  • Check asparagus freshness by selecting bright green, firm stalks with tight tips, which guarantees crisp texture and best flavor.
  • Swap chicken for tofu or white fish to create vegetarian or alternative protein versions that maintain the casserole’s creamy consistency.
  • Season vegetables carefully during sautéing to build deep flavor before combining with other ingredients, enhancing the overall taste profile.
  • Use low-sodium chicken broth to control salt levels and prevent the dish from becoming too salty, especially when adding Parmesan cheese.
