Instructions
- Preheat your oven to 350°F and coat a 9×13-inch baking dish with cooking spray.
- Brown 1 pound ground beef and 1 medium diced onion in a large skillet over medium heat until meat is completely cooked.
- Drain excess fat from the skillet after beef is thoroughly browned.
- Add 1 can diced tomatoes, 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 can corn, 1 can black beans, 1 cup sour cream, and all seasonings to the skillet.
- Stir the mixture until all ingredients are well combined and evenly distributed.
- Crush 1 bag of tortilla chips and spread half the crushed chips across the bottom of your prepared baking dish.
- Pour the entire beef and vegetable mixture over the first layer of crushed chips, spreading it evenly.
- Top the mixture with remaining crushed tortilla chips.
- Sprinkle 2 cups of shredded Mexican cheese blend across the top of the casserole.
- Bake at 350°F for 25-30 minutes until cheese is completely melted and edges are slightly golden.
- Remove from oven and let the casserole rest for 5-7 minutes before serving.
