Instructions

  1. Preheat your oven to 350°F and coat a 9×13-inch baking dish with cooking spray.
  2. Brown 1 pound ground beef and 1 medium diced onion in a large skillet over medium heat until meat is completely cooked.
  3. Drain excess fat from the skillet after beef is thoroughly browned.
  4. Add 1 can diced tomatoes, 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 can corn, 1 can black beans, 1 cup sour cream, and all seasonings to the skillet.
  5. Stir the mixture until all ingredients are well combined and evenly distributed.
  6. Crush 1 bag of tortilla chips and spread half the crushed chips across the bottom of your prepared baking dish.
  7. Pour the entire beef and vegetable mixture over the first layer of crushed chips, spreading it evenly.
  8. Top the mixture with remaining crushed tortilla chips.
  9. Sprinkle 2 cups of shredded Mexican cheese blend across the top of the casserole.
  10. Bake at 350°F for 25-30 minutes until cheese is completely melted and edges are slightly golden.
  11. Remove from oven and let the casserole rest for 5-7 minutes before serving.
  12. Garnish with fresh chopped cilantro and an optional dollop of sour cream.
