Protein:
- 1 pound lean ground beef
- 1 package taco seasoning
Base Ingredients:
- 1 can Ranch Style beans
- 1 can Ro-tel tomatoes
- 1 can cream of chicken soup
- 1 10-12 ounce bag tortilla chips
- 1 small onion
Topping/Cheese:
- 2 cups shredded cheddar cheese
- ½ cup water
Instructions
- Brown 1 pound of lean ground beef in a large skillet over medium heat for 5-7 minutes. Drain excess fat completely.
- Add 1 small chopped onion to the skillet. Cook for 2-3 minutes until onions become translucent.
- Sprinkle 1 package of taco seasoning over the beef. Pour ½ cup water into the skillet and simmer for 4-5 minutes until liquid reduces slightly.
- Preheat your oven to 350°F. Grab a 9×13 inch casserole dish and create a base layer using ½ of the crushed tortilla chips.
- Spread half of your seasoned beef mixture directly over the tortilla chip layer. Sprinkle ⅔ cup shredded cheddar cheese on top.
- Open 1 can of Ranch Style beans and distribute evenly across the beef layer. Pour 1 can of Ro-tel tomatoes over the beans.
- Spread 1 can of cream of chicken soup across the entire surface, ensuring complete coverage.
- Add remaining beef mixture and top with the rest of the shredded cheese (about 1 ⅓ cups total).
- Bake uncovered at 350°F for 25-30 minutes until cheese melts and casserole edges become golden brown.
- Remove from oven and let rest for 5 minutes. Serve with sour cream and salsa on the side.
