Description

Spice up your dinner with Mexican Casserole, a hearty one-pan meal that brings zesty flavors straight to your table. Layers of tortillas, seasoned meat, and melted cheese create a comforting dish perfect for family gatherings.

Ingredients

Scale

Protein:

  • 1 pound lean ground beef
  • 1 package taco seasoning

Base Ingredients:

  • 1 can Ranch Style beans
  • 1 can Ro-tel tomatoes
  • 1 can cream of chicken soup
  • 1 10-12 ounce bag tortilla chips
  • 1 small onion

Topping/Cheese:

  • 2 cups shredded cheddar cheese
  • ½ cup water

Instructions

  1. Brown 1 pound of lean ground beef in a large skillet over medium heat for 5-7 minutes. Drain excess fat completely.
  2. Add 1 small chopped onion to the skillet. Cook for 2-3 minutes until onions become translucent.
  3. Sprinkle 1 package of taco seasoning over the beef. Pour ½ cup water into the skillet and simmer for 4-5 minutes until liquid reduces slightly.
  4. Preheat your oven to 350°F. Grab a 9×13 inch casserole dish and create a base layer using ½ of the crushed tortilla chips.
  5. Spread half of your seasoned beef mixture directly over the tortilla chip layer. Sprinkle ⅔ cup shredded cheddar cheese on top.
  6. Open 1 can of Ranch Style beans and distribute evenly across the beef layer. Pour 1 can of Ro-tel tomatoes over the beans.
  7. Spread 1 can of cream of chicken soup across the entire surface, ensuring complete coverage.
  8. Add remaining beef mixture and top with the rest of the shredded cheese (about 1 ⅓ cups total).
  9. Bake uncovered at 350°F for 25-30 minutes until cheese melts and casserole edges become golden brown.
  10. Remove from oven and let rest for 5 minutes. Serve with sour cream and salsa on the side.

Notes

  • Using lean ground beef helps reduce excess grease and makes the casserole less oily.
  • Crushing the tortilla chips into smaller pieces creates a more even base and better texture throughout the dish.
  • For a gluten-free version, swap regular tortilla chips for corn tortilla chips and use a gluten-free cream of chicken soup.
  • Adding fresh chopped cilantro or green onions on top provides a bright, fresh contrast to the rich, hearty casserole flavors.
