Instructions

  2. Mix 2 boxes of cornbread mix with 2 eggs and ⅔ cup milk, creating a smooth batter.
  3. Brown 1.5 pounds ground beef in a large skillet over medium heat, draining excess fat.
  4. Sprinkle 1 packet of taco seasoning over the beef and stir thoroughly.
  5. Add 1 cup shredded Mexican blend cheese, 1 can drained corn, 1 can pinto beans, and 1 can Rotel to the skillet.
  6. Simmer the meat mixture for 5 minutes, stirring occasionally to blend flavors.
  7. Pour the meat mixture into the cornbread batter and mix until completely combined.
  8. Transfer the entire mixture to the prepared baking dish, spreading evenly.
  9. Cover the dish with aluminum foil and bake at 425°F for 45 minutes.
