Description

Cheesy sour cream beef casserole brings comfort straight from Grandma’s kitchen to your dinner table. Hearty ground beef, creamy sour cream, and melted cheese combine for a satisfying meal that’ll have your family asking for seconds.

Ingredients

Scale

Main Proteins:

  • 1 lb lean ground beef
  • 8 oz egg noodles

Dairy:

  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup cheddar cheese (grated)

Seasonings and Extras:

  • 2 15 oz cans tomato sauce
  • ½ yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • Kosher salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Brown 1 lb ground beef and ½ chopped onion in a large skillet at medium-high heat for 10 minutes, stirring frequently.
  2. Add 2 minced garlic cloves and cook for 1 additional minute until fragrant.
  3. Pour in 2 (15 oz) cans of tomato sauce and 1 teaspoon Italian seasoning. Simmer for 5 minutes, stirring occasionally.
  4. Season meat sauce with kosher salt and black pepper to your personal taste preference.
  5. Boil 8 oz egg noodles in salted water according to package instructions until perfectly al dente.
  6. Drain noodles and transfer to a large mixing bowl.
  7. Mix 1 cup sour cream and 1 cup cottage cheese into the noodles. Season with additional salt and pepper.
  8. Coat a 9×13-inch baking dish with nonstick spray and preheat oven to 350°F.
  9. Layer half the noodle mixture across the bottom of the baking dish.
  10. Spread half the prepared meat sauce over the noodle layer.
  11. Repeat layering with remaining noodles and meat sauce.
  12. Sprinkle 1 cup grated cheddar cheese across the top of the casserole.
  13. Bake at 350°F for 30 minutes until cheese melts completely and edges turn golden.
  14. Allow casserole to rest for 10 minutes before serving to help it set and cool slightly.

Notes

  • Swap ground beef for ground turkey or plant-based crumbles to make the casserole lighter and more diet-friendly.
  • Freeze individual portions in airtight containers for quick weeknight meals that reheat perfectly.
  • For extra texture, toast breadcrumbs with a little butter and sprinkle over the top before the final cheese layer.
  • Add fresh chopped herbs like parsley or chives after baking to brighten the flavor and add a pop of color.
