Description

Baked Feta Pasta became a viral sensation that delivers serious comfort in just one pan. Creamy feta melts into juicy tomatoes, creating a simple sauce that wraps your favorite pasta in pure Mediterranean magic.

Ingredients

Scale

Main Ingredients:

  • 8 ounces fusilli pasta
  • 2 pints cherry tomatoes
  • 8-ounce block feta cheese

Supporting Ingredients:

  • ½ cup extra virgin olive oil
  • 3 garlic cloves
  • ¼ cup fresh basil
  • ¼ cup parsley
  • ¼ cup reserved cooking liquid

Seasonings:

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes

Instructions

  1. Arrange 2 pints of cherry tomatoes and an 8-ounce block of feta cheese in a baking dish. Drizzle ½ cup olive oil over the ingredients, then sprinkle ½ teaspoon salt and ¼ teaspoon black pepper across the surface.
  2. Place the baking dish in a preheated 400°F oven. Roast for exactly 30 minutes until tomatoes burst and feta turns soft and golden.
  3. While the tomatoes roast, boil 8 ounces of fusilli pasta in salted water according to package timing. Reserve ¼ cup of the cooking liquid before draining.
  4. Remove the baking dish from the oven. Immediately crush 3 minced garlic cloves into the hot tomato and feta mixture. Stir in ¼ cup chopped basil and a pinch of red pepper flakes.
  5. Pour ¼ cup Arrabiata sauce or the reserved pasta water into the roasted tomato mixture. Mix thoroughly to create a creamy sauce.
  6. Transfer the drained pasta directly into the baking dish. Toss gently until every pasta strand becomes coated with the fragrant sauce.
  7. Sprinkle ¼ cup chopped parsley over the top. Serve the dish immediately while the cheese remains warm and melted.

Notes

  • Let feta cheese sit at room temperature for 15 minutes before baking to ensure even melting and creamy texture.
  • Select ripe, sweet cherry tomatoes for the most intense flavor and best sauce consistency.
  • Use a ceramic or glass baking dish to prevent sticking and help tomatoes caramelize evenly.
  • For a lighter version, substitute half the pasta with zucchini noodles or choose whole wheat pasta for added nutrition.
