Description

Hearty Pork Chop and Scalloped Potato Casserole brings comfort straight from your kitchen, guaranteed to satisfy hungry family members with its rich, creamy layers and tender meat nestled between cheesy potato goodness.

Ingredients

Scale

Proteins:

  • 4 bone-in pork chops

Starches and Vegetables:

  • 2 pounds potatoes
  • 1 large onion
  • 3 cloves garlic

Seasonings and Dairy:

  • 1 tablespoon vegetable oil
  • 3 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon paprika
  • Salt
  • Pepper
  • Fresh parsley

Instructions

  1. Season your 4 bone-in pork chops generously with salt and pepper on both sides.
  2. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat until shimmering.
  3. Brown the pork chops for 3-4 minutes per side until golden, then transfer to a separate plate.
  4. Reduce skillet heat to medium and sauté your chopped onions and 3 minced garlic cloves until translucent, about 4 minutes.
  5. Sprinkle 3 tablespoons flour over the onion mixture, stirring constantly to create a smooth roux.
  6. Gradually pour in 1 ½ cups milk and 1 cup chicken broth, whisking continuously until sauce thickens, about 2-3 minutes.
  7. Remove sauce from heat and let it cool slightly.
  8. Layer half of your thinly sliced 2 pounds of potatoes in a large casserole dish.
  9. Pour half the onion sauce over the potato layer and sprinkle with ½ cup shredded cheddar cheese.
  10. Repeat layering with remaining potatoes, sauce, and another ½ cup cheese.
  11. Dust the top with 1 teaspoon paprika.
  12. Arrange browned pork chops on top of the potato layers.
  13. Cover casserole with foil and bake at 350°F for 1 hour.
  14. Remove foil and continue baking for 15-20 minutes until pork reaches 145°F and potatoes are tender.
  15. Let the casserole rest for 10 minutes before garnishing with fresh chopped parsley.

Notes

  • Browning the pork chops before baking adds deep, rich flavor that takes this casserole from good to exceptional.
  • Let the potatoes get nicely golden around the edges by removing the foil during the last part of baking for beautiful color and slight crispy texture.
  • When making the sauce, stir constantly to prevent lumps and ensure a smooth, creamy base that coats every potato slice perfectly.
  • Choose thick-cut pork chops for the best results, as thinner cuts can dry out more quickly during the baking process and become tough.
