Instructions

  1. Brown 2 pounds of ground chuck in a large skillet over medium-high heat until no pink remains. Drain excess fat thoroughly.
  2. Incorporate 2 cups chopped onions and 1 cup chopped green bell peppers into the meat. Cook for 3-4 minutes until vegetables soften.
  3. Pour 3 tablespoons tomato paste, 2 cups beef broth, 1 ½ cups ketchup, 3 tablespoons yellow mustard, 2 tablespoons Worcestershire sauce, 2 tablespoons brown sugar, 1 teaspoon garlic powder, and ½ teaspoon black pepper into the skillet. Stir until well mixed.
  4. Reduce heat to low and simmer the mixture for 15 minutes, stirring occasionally to prevent sticking.
  5. Whisk 2 large eggs and ⅔ cup whole milk in a separate bowl until smooth.
  6. Add 2 packages of corn muffin mix and 1 ½ teaspoons baking powder to the egg mixture. Blend until just combined.

  8. Transfer the meat mixture into the prepared baking dish, spreading evenly across the bottom.
