Description

Burrito Casserole layers bold spices, tortillas, and melted cheese. It’s a no-fuss dinner that feeds everyone happily.

Ingredients

Scale

Main Ingredients:

  • 1 lb ground beef
  • 2 cups shredded cheddar cheese
  • 8 flour tortillas

Protein and Vegetable Components:

  • 1 can black beans
  • 1 can corn
  • 1 can diced tomatoes
  • 1 packet taco seasoning

Garnish and Binding Ingredients:

  • 1 cup sour cream
  • ½ cup chopped green onions

Instructions

  1. Warm your oven to 350°F (175°C) for perfect casserole baking.
  2. Sizzle 1 lb ground beef in a skillet over medium heat until completely browned and no pink remains.
  3. Incorporate 1 can drained black beans, 1 can drained corn, 1 can diced tomatoes, and 1 packet taco seasoning into the cooked meat. Stir until ingredients are well combined.
  4. Grab a 9×13-inch baking dish and create your first layer using 4 sliced flour tortillas, covering the entire bottom surface.
  5. Carefully spread half of the seasoned meat mixture directly over the tortilla layer.
  6. Dollop ½ cup sour cream across the meat, ensuring even coverage.
  7. Generously scatter 1 cup shredded cheddar cheese over the sour cream layer.
  8. Repeat the layering process: remaining tortilla strips, remaining meat mixture, remaining sour cream, and remaining 1 cup cheese.
  9. Transfer the casserole to the preheated oven and bake for 25-30 minutes until cheese melts completely and edges turn golden brown.
  10. After removing from oven, let the casserole rest for 5 minutes, then garnish with ½ cup chopped green onions before serving.

Notes

  • Swap ground beef for ground turkey, chicken, or plant-based crumbles to customize the protein to your dietary needs.
  • Drain canned beans and vegetables completely to prevent excess liquid that could make the casserole soggy.
  • Warm tortilla strips briefly before layering to help them absorb flavors and maintain a better texture.
  • For a spicier version, add diced jalapeños or use a hot taco seasoning blend to kick up the heat.
