Instructions

  1. Rinse and trim 1 pound of fresh green beans. Slice 8 ounces of cremini mushrooms into thin pieces.

  3. Add prepared green beans and mushrooms to the skillet. Sprinkle ½ teaspoon salt and ¼ teaspoon black pepper. Cook while stirring occasionally until vegetables are tender-crisp, around 9 minutes.
  4. Remove vegetable mixture from skillet and set aside. Lower heat to medium-low.
  5. Dust ¼ cup flour into the empty skillet. Stir constantly for 2 minutes to prevent burning.
  6. Gradually whisk 2 cups milk and ½ cup vegetable broth into the flour, creating a smooth sauce.
  7. Simmer sauce for 6 minutes, stirring continuously until it thickens. Mix in 1 teaspoon soy sauce, ¼ teaspoon garlic powder, and ¼ teaspoon onion powder.
  8. Preheat your oven to 350°F. Return vegetable mixture to the sauce and combine thoroughly.
  9. Transfer mixture to a 9×13 inch baking dish. Spread evenly across the surface.
  10. Sprinkle 3 ounces crispy fried onions over the casserole.
  11. Bake for 22 minutes until edges become bubbly and golden.
  12. Top with remaining 3 ounces crispy fried onions. Bake an additional 5 minutes.
