Instructions
- Preheat the oven to 350°F and position the rack in the center for even heating.
- Season 1 lb. ground beef with 1 tsp. seasoning salt, salt, and pepper. Cook in a skillet over medium-high heat until browned completely.
- Drain excess fat from the beef using a colander, then transfer to a 9×13 inch baking dish.
- Melt 2 Tbsp. unsalted butter in the same skillet over medium heat. Add 1 lb. sliced mushrooms and cook for 5-6 minutes until golden.
- Stir 2 tsp. minced garlic into the mushrooms and cook for an additional 1 minute until fragrant.
- Sprinkle 2 Tbsp. chopped fresh parsley over the mushrooms and remove from heat.
- In a mixing bowl, whisk 6 oz. softened cream cheese with 3 large eggs until smooth and creamy.
- Pour the cream cheese mixture evenly over the ground beef in the baking dish.
- Top the casserole with the sautéed mushrooms, spreading them in an even layer.
- Bake uncovered for 20 minutes at 350°F until the casserole is set and slightly golden.
- Remove from the oven and sprinkle Parmesan cheese on top before serving hot.
Notes
- Opt for fresh mushrooms with firm, unblemished caps for the best texture and flavor in the casserole.
- Choose ground beef with a moderate fat content (80/20) to ensure the dish stays moist without becoming greasy.
- For a low-carb version, skip any potential breadcrumbs and use extra cheese as a topping instead of traditional crumb coatings.
- When sautéing mushrooms, avoid overcrowding the pan to help them brown nicely and develop deeper, richer flavors.
