Description

Rotisserie Chicken and Stuffing Casserole brings comfort straight from your kitchen to the dinner table. Hearty layers of tender chicken and savory stuffing create a satisfying meal that makes weeknight dinners feel like a warm family gathering.

Ingredients

Scale

Protein:

  • 3 cups rotisserie chicken, shredded
  • ½ cup shredded cheddar cheese

Base and Liquids:

  • 1 6 oz box stuffing mix
  • 1 10.5 oz can cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • ¼ cup chicken broth
  • ¼ cup butter

Seasonings and Vegetables:

  • 1 cup frozen mixed vegetables
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions

  1. Heat your oven to 375°F and grease a 9×13 inch baking dish with cooking spray or butter.
  2. Combine 3 cups shredded rotisserie chicken, 1 can cream of chicken soup, ½ cup sour cream, ¼ cup chicken broth, 1 cup frozen mixed vegetables, ¼ teaspoon black pepper, and ¼ teaspoon garlic powder in a large mixing bowl.
  3. Transfer the chicken mixture and spread it evenly across the bottom of the prepared baking dish.
  4. Melt ¼ cup butter and mix with ½ cup milk according to the stuffing mix package instructions.
  5. Layer the prepared stuffing mixture directly over the chicken mixture, creating an even surface.
  6. Sprinkle ½ cup shredded cheddar cheese across the top of the stuffing layer.
  7. Slide the casserole into the 375°F oven and bake uncovered for 25-30 minutes until the cheese melts and the edges become golden and bubbly.
  8. Remove the casserole from the oven and let it rest for 5 minutes to allow the layers to set and cool slightly.
  9. Serve the casserole directly from the baking dish while it’s warm and comforting.

Notes

  • Rotisserie chicken saves serious time and adds fantastic flavor, so grab a pre-cooked bird from the grocery store deli section.
  • Swap frozen vegetables with fresh seasonal veggies for a more vibrant and nutritious casserole.
  • Keep the stuffing layer light and fluffy by not pressing it down too firmly when spreading over the chicken mixture.
  • For a gluten-free version, use gluten-free cream of chicken soup and substitute stuffing with quinoa or rice.
