Description

Roasted Kielbasa and Potatoes brings together hearty Polish sausage and crispy potatoes in a simple weeknight dinner that comes together in a flash. Toss everything on a sheet pan, season generously, and watch your family devour this delicious one-pan meal straight from the oven.

Ingredients

Scale

Main Ingredients:

  • 1 pound kielbasa sausage
  • 4 cups potatoes

Aromatic Ingredients:

  • 1 large onion
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Seasoning and Finishing Ingredients:

  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • Fresh parsley

Instructions

  1. Heat your oven to 400°F and grab a large baking sheet.
  2. Slice 1 pound kielbasa into 1-inch pieces and dice 4 cups potatoes into matching cubes.
  3. Thinly slice 1 large onion and mince 2 cloves of garlic.
  4. Mix kielbasa, potatoes, onion, and garlic in a large bowl.
  5. Pour 2 tablespoons olive oil over the mixture and toss until everything is evenly coated.
  6. Sprinkle 1 teaspoon dried thyme, 1 teaspoon paprika, and salt and pepper across the ingredients.
  7. Spread the entire mixture onto the baking sheet in a single, even layer.
  8. Roast for 15 minutes, then carefully stir the ingredients to promote even browning.
  9. Continue roasting for another 15-20 minutes until potatoes turn golden and crisp around the edges.
  10. Remove the baking sheet from the oven and let the dish rest for 3-5 minutes.
  11. Chop fresh parsley and scatter it over the top before serving.

Notes

  • Cut kielbasa and potatoes into similar-sized pieces to guarantee even cooking and consistent texture throughout the dish.
  • Spread ingredients in a single layer on the baking sheet to help potatoes crisp up and prevent steaming instead of roasting.
  • Line your baking sheet with parchment paper for easier cleanup and to prevent sticking, especially with the olive oil and potato starches.
  • For a lighter version, swap traditional kielbasa with turkey kielbasa and use less olive oil while still maintaining great flavor and crispness.
