Instructions

- Pour 1 ½ cups warm water into the flour mixture. Stir until a shaggy, sticky dough forms. Mix in the roasted garlic and 2 tablespoons chopped fresh rosemary.
- Drizzle 1 tablespoon olive oil over the dough and gently incorporate. Cover the bowl with a damp kitchen towel.
- Allow the dough to rise at room temperature for 8-10 hours until it doubles and becomes puffy and bubbly.
- Dust a clean surface with flour. Gently transfer the dough and shape it into a round loaf using minimal handling.
- Place the shaped loaf on a parchment-lined baking sheet. Cover loosely and let rise another 1-2 hours.
- Position a Dutch oven with its lid inside the oven and preheat to 450°F for 30 minutes.
- Carefully transfer the dough with its parchment paper into the heated Dutch oven. Cover and bake for 30 minutes.
- Remove the lid and continue baking 15-20 minutes until the crust turns deep golden brown.
- Transfer the bread to a wire rack and cool for at least 1 hour before slicing to allow interior structure to set.
