Instructions

  1. Preheat the oven to 400°F. Trim the top of the garlic bulb, drizzle 1 tablespoon olive oil and sprinkle 1 teaspoon salt over it, then wrap tightly in aluminum foil.
  2. Roast the garlic for 40 minutes until completely soft. Let it cool for 5 minutes, then squeeze the caramelized cloves from their papery skins.
  3. In a large mixing bowl, combine 3 cups all-purpose flour, 1 ½ teaspoons salt, and ½ teaspoon instant yeast. Create a well in the center.
  4. Pour 1 ½ cups warm water into the flour mixture. Stir until a shaggy, sticky dough forms. Mix in the roasted garlic and 2 tablespoons chopped fresh rosemary.
  5. Drizzle 1 tablespoon olive oil over the dough and gently incorporate. Cover the bowl with a damp kitchen towel.
  6. Allow the dough to rise at room temperature for 8-10 hours until it doubles and becomes puffy and bubbly.
  7. Dust a clean surface with flour. Gently transfer the dough and shape it into a round loaf using minimal handling.
  8. Place the shaped loaf on a parchment-lined baking sheet. Cover loosely and let rise another 1-2 hours.
  9. Position a Dutch oven with its lid inside the oven and preheat to 450°F for 30 minutes.
  10. Carefully transfer the dough with its parchment paper into the heated Dutch oven. Cover and bake for 30 minutes.
  11. Remove the lid and continue baking 15-20 minutes until the crust turns deep golden brown.
  12. Transfer the bread to a wire rack and cool for at least 1 hour before slicing to allow interior structure to set.
