Garlic Parmesan Chicken and Potatoes brings comfort straight to your dinner table with minimal effort and maximum flavor. Crispy chicken and golden potatoes seasoned with garlic and parmesan create a simple yet satisfying meal that makes weeknight cooking a breeze.

Ingredients

Scale

Protein:

  • 4 boneless, skinless chicken breasts

Starches:

  • 1.5 pounds (680 grams) baby potatoes, halved

Seasonings and Additions:

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 4 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese
  • 3 tablespoons (45 milliliters) olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Grab a large baking sheet and line it with parchment paper for easy cleanup.
  2. Toss 1½ pounds halved baby potatoes with 2 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon paprika, 1 teaspoon oregano, 1 teaspoon thyme, and 1 teaspoon garlic powder in a large bowl.
  3. Spread the seasoned potatoes in a single layer on the baking sheet. Roast for 15 minutes until they start to crisp up.
  4. Pat 4 chicken breasts dry with paper towels. Mix them with 1 tablespoon olive oil, 4 minced garlic cloves, and 2 tablespoons melted butter in the same mixing bowl.
  5. Remove the potatoes from the oven after 15 minutes. Arrange the seasoned chicken breasts among the potatoes.
  6. Sprinkle ½ cup grated Parmesan cheese evenly over the chicken and potatoes.
  7. Return the pan to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  8. Switch the oven to broil for 2-3 minutes to create a golden, crispy top. Watch carefully to prevent burning.
  9. Garnish with 1 tablespoon chopped fresh parsley. Serve the dish immediately while hot and crispy.

Notes

  • Check potato sizes carefully to ensure even cooking alongside the chicken.
  • Pat chicken dry before seasoning to help the herb coating stick and create a crispy exterior.
  • Use a meat thermometer to confirm chicken reaches an internal temperature of 165°F for safe consumption.
  • For a gluten-free version, swap regular flour with almond flour or cornstarch in the seasoning mix.
