Instructions

  1. Mix 1½ cups oat flour, ¼ cup coconut sugar, 2 teaspoons baking powder, ½ teaspoon cinnamon, ¼ teaspoon nutmeg, and ½ teaspoon salt in a large bowl. Whisk until completely combined.
  2. Crack 2 large eggs into a separate bowl. Add ½ cup almond milk, 1 teaspoon vanilla extract, and 1 tablespoon melted coconut oil. Blend thoroughly.
  3. Pour wet ingredients into dry ingredients. Stir gently until just combined. Your batter should look smooth but not overmixed.
  4. Gently fold 2 cups diced apples into the batter. Distribute them evenly throughout the mixture.
  5. Preheat your air fryer to 375°F or oven to 375°F. Prepare a parchment-lined baking sheet if using an oven.
