Instructions

  1. Boil 12 oz of penne pasta in a large pot of salted water for 8-10 minutes until perfectly al dente. Drain pasta and set aside in a colander.
  2. Heat your oven to 375°F and brush a 9×13-inch baking dish with 1 tablespoon olive oil to prevent sticking.
  3. Blend 1 cup ricotta cheese with 1 teaspoon Italian seasoning, ½ teaspoon garlic powder, ½ teaspoon onion powder, and ¼ teaspoon red pepper flakes until smooth.
  4. Pour 24 oz marinara sauce over drained pasta and toss gently to coat each noodle evenly in the sauce.
  5. Spread pasta mixture across the greased baking dish and dot the surface with ricotta mixture, creating small pockets throughout the dish.
  6. Scatter 1 cup shredded mozzarella and ½ cup grated Parmesan cheese across the pasta. Arrange half of the pepperoni slices on top.
  7. Cover the dish with aluminum foil and bake at 375°F for 20 minutes to allow flavors to meld together.
