Instructions

  3. Blend 1 ½ teaspoons kosher salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon paprika in a small bowl.
  4. Sprinkle the spice mixture generously over the entire chicken, focusing on creating an even coating that covers every section of the skin.
  5. Slice the lemon in half and stuff both halves inside the chicken’s cavity, along with quartered onion and 4 sprigs of fresh rosemary.
  6. Position the seasoned chicken breast-side up in a roasting pan, surrounded by chopped carrots, potatoes, and additional onions if desired.
