Description

Chicken Mushroom Rice Casserole brings comfort straight from your kitchen to the dinner table, offering a hearty meal that feels like a warm embrace. Creamy, cheesy, and packed with tender chicken and earthy mushrooms, this casserole becomes your go-to dinner solution when you need something satisfying and simple.

Ingredients

Scale

Main Protein:

  • 1.5 pounds boneless, skinless chicken breasts

Carbohydrates and Base:

  • 1 cup long-grain white rice
  • 1 can (10.5 ounces) cream of mushroom soup

Supporting Ingredients:

  • 2 cups low-sodium chicken broth
  • 1 cup milk
  • 1.5 cups shredded mozzarella or cheddar cheese
  • 8 ounces fresh mushrooms
  • 1 small yellow onion
  • 3 garlic cloves
  • 1 tablespoon olive oil
  • 0.5 teaspoon paprika
  • Salt
  • Pepper
  • Fresh parsley (optional)
  • Fresh chives (optional)

Instructions

  1. Preheat your oven to 375°F and spray a 9×13-inch casserole dish with cooking spray to prevent sticking.
  2. Season 1 ½ pounds chicken pieces with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat and cook chicken until no longer pink, about 6-7 minutes.
  3. Remove chicken from skillet and set aside. In the same pan, sauté 1 diced onion for 2-3 minutes until translucent.
  4. Add 3 minced garlic cloves and 8 ounces sliced mushrooms to the onions. Cook for 4-5 minutes until mushrooms release moisture and turn golden.
  5. In a large mixing bowl, combine cooked chicken, sautéed vegetables, 1 cup uncooked rice, 2 cups chicken broth, 1 cup milk, 1 can cream of mushroom soup, ½ teaspoon paprika, salt, and pepper.
  6. Stir ingredients thoroughly to ensure even distribution and transfer mixture to prepared baking dish.
  7. Cover casserole dish tightly with aluminum foil and bake at 375°F for 50-55 minutes until rice is tender.
  8. Remove foil and sprinkle 1 ½ cups shredded cheese evenly across the top of the casserole.
  9. Return uncovered dish to oven and bake for an additional 10 minutes until cheese melts completely.
  10. Allow casserole to rest for 5-10 minutes before serving to help flavors meld and make serving easier.

Notes

  • Check your chicken’s doneness by cutting into the largest piece to ensure no pink remains inside.
  • Brown the mushrooms thoroughly to develop a deep, rich flavor that adds complexity to the casserole.
  • For a gluten-free version, swap cream of mushroom soup for homemade white sauce and use gluten-free rice.
  • Experiment with different cheeses like sharp cheddar or gruyère to customize the casserole’s flavor profile.
