Description

Sizzling Mediterranean Baked Fish delivers pure ocean-to-table delight straight from coastal kitchens. Tender white fish seasoned with herbs and lemon creates a simple, satisfying meal perfect for weeknight dinners.

Ingredients

Scale

Main Ingredients:

  • 4 haddock fillets
  • 1 ½ cup baby tomatoes, whole
  • 1 cup Mezzetta olives

Supporting Ingredients:

  • 4 garlic cloves, sliced
  • 6 sprigs fresh thyme
  • ¼ cup Mezzetta sliced jalapenos
  • 2 teaspoons Mezzetta capers, drained

Seasoning and Oil:

  • ⅓ cup olive oil
  • ¼ teaspoon salt and pepper
  • ½ teaspoon chili flakes (optional)

Instructions

  1. Heat your oven to 450°F and place a baking dish with ⅓ cup olive oil inside for 6-8 minutes.
  2. Season 4 haddock fillets with ¼ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon chili flakes.
  3. Remove hot baking dish from oven and carefully add 4 sliced garlic cloves, 3 thyme sprigs, and 1 ½ cups whole baby tomatoes.
  4. Arrange seasoned fish fillets into the preheated dish and distribute 1 cup Mezzetta olives around them.
  5. Sprinkle ¼ cup sliced jalapeños and 2 teaspoons drained capers over the fish.
  6. Reduce oven temperature to 375°F and bake for 15-18 minutes until fish is cooked through.
  7. Switch oven to broil and cook for an additional 2 minutes to achieve a golden, slightly charred surface.
  8. Remove from oven and drizzle pan’s olive oil over the fish.
  9. Garnish with remaining thyme sprigs and serve immediately while hot.

Notes

  • Heat the baking dish with olive oil beforehand to create a sizzling surface that helps develop a delicious crust on the fish.
  • Choose fresh, firm white fish like cod or halibut that can withstand the high-temperature baking method without falling apart.
  • For a low-carb and gluten-free option, this recipe naturally fits those dietary requirements without any modifications needed.
  • Fresh herbs make a significant difference, so use fresh thyme instead of dried for brighter, more vibrant flavor in the final dish.
