Description

Mexican casserole brings together classic comfort ingredients that practically dance on your plate. Layers of seasoned ground beef, cheese, and tortillas create a quick weeknight dinner that fills hungry bellies with zesty southwestern flavor.

Ingredients

Scale

Protein:

  • 1 pound ground beef
  • 1 ¼-ounce package taco seasoning

Grains and Beans:

  • 3 ½ cups boiled egg noodles
  • 15 ¼-ounce can kidney beans (drained and rinsed)

Sauces and Vegetables:

  • 15-ounce can corn kernels (drained)
  • 1 cup mild salsa with chunks
  • ½ cup tomato sauce
  • ¼ cup taco sauce
  • ¼ cup sliced black olives

Instructions

  1. Heat your oven precisely to 325°F and grab a 9×13-inch baking dish for assembling the casserole.
  2. Brown 1 pound of ground beef in a skillet over medium heat until no pink remains, then thoroughly drain excess fat.
  3. Cook 3 ½ cups of egg noodles according to package directions, then drain completely.
  4. Drain 1 (15-ounce) can of corn kernels and 1 (15 ¼-ounce) can of kidney beans, rinsing beans thoroughly.
  5. Add browned beef, cooked noodles, drained corn, 1 cup salsa, ¼ cup black olives, drained beans, ¼ cup taco sauce, entire package of taco seasoning, and ½ cup tomato sauce into the baking dish.
  6. Mix all ingredients until evenly combined and spread smoothly across the dish.
  7. Slide casserole into preheated oven and bake for exactly 30 minutes until everything is steaming hot and slightly bubbling around edges.

Notes

  • Let the casserole rest for 5-10 minutes after baking to help it set and make serving easier.
  • Swap ground beef for ground turkey or plant-based crumbles to create a lighter or vegetarian version.
  • Fresh corn kernels work great as a substitute for canned corn, adding a sweeter flavor and crunchier texture.
  • For extra richness, sprinkle shredded cheese on top during the last 10 minutes of baking to create a melted, golden topping.
