Instructions

  3. In a large mixing bowl, combine 2 ½ cups shredded chicken, 1 can rinsed black beans, 1 can drained corn, 1 cup shredded colby jack cheese, 1 can Ro-tel tomatoes, 1 small can green chilies, 1 can cream of chicken soup, 8 ounces sour cream, and 1 tablespoon taco seasoning.
  4. Stir the mixture thoroughly until all ingredients are evenly distributed and well-blended.
  5. Pour the combined mixture over the crushed Doritos in the baking dish, ensuring an even layer across the surface.
  6. Bake at 350°F for 20 minutes until the casserole is heated through and bubbling.
  7. Sprinkle the remaining crushed Doritos and ½ cup of shredded cheese over the top of the casserole.
  8. Return the dish to the oven for an additional 5-7 minutes, or until the cheese melts completely.
