Seasoning and Binding Ingredients:
- 1 can condensed cream of chicken soup
- 8 ounces sour cream
- 1 tablespoon taco seasoning
- Cilantro (optional)
Instructions
- Preheat the oven to 350°F and coat a 9×13-inch baking dish with cooking spray to prevent sticking.
- Crush 1 pack of nacho cheese Doritos and spread half the crushed chips across the bottom of the baking dish.
- In a large mixing bowl, combine 2 ½ cups shredded chicken, 1 can rinsed black beans, 1 can drained corn, 1 cup shredded colby jack cheese, 1 can Ro-tel tomatoes, 1 small can green chilies, 1 can cream of chicken soup, 8 ounces sour cream, and 1 tablespoon taco seasoning.
- Stir the mixture thoroughly until all ingredients are evenly distributed and well-blended.
- Pour the combined mixture over the crushed Doritos in the baking dish, ensuring an even layer across the surface.
- Bake at 350°F for 20 minutes until the casserole is heated through and bubbling.
- Sprinkle the remaining crushed Doritos and ½ cup of shredded cheese over the top of the casserole.
- Return the dish to the oven for an additional 5-7 minutes, or until the cheese melts completely.
- Optional: Garnish with fresh chopped cilantro before serving for added flavor and color.
Notes
- Crushing Doritos by hand works best, giving you better texture control than using a food processor.
- Swap canned chicken for rotisserie or leftover grilled chicken to add more depth of flavor.
- For a gluten-free version, use gluten-free tortilla chips instead of Doritos and check your taco seasoning ingredients.
- Prep this casserole ahead of time by assembling everything except the final chip and cheese topping, then refrigerate until ready to bake.
