Instructions
- Cut 1 kg chicken breast into 1-inch thick strips on a clean cutting board.
- Season chicken strips with ¼ tsp black pepper and sea salt. Thoroughly coat each piece with 1 cup all-purpose flour.
- Heat olive oil in a skillet over medium-high heat. Saute chicken strips for 3-4 minutes until light golden on each side. Transfer to a 13×9 baking dish.
- In the same skillet, saute ½ kg sliced mushrooms and 1 chopped onion over medium heat for 5-6 minutes until softened.
- Add 2-3 minced garlic cloves to the mushroom mixture. Stir continuously for 1-2 minutes until fragrant.
- Spread the mushroom and onion mixture evenly over the chicken in the baking dish.
- Melt 2 tbsp unsalted butter in a separate pan over medium heat.
- Whisk 3 tbsp all-purpose flour into melted butter for 1-2 minutes until smooth.
- Pour 1 ½ cups chicken stock into the butter mixture. Add 1 tbsp lemon juice and a pinch of black pepper.

- Remove foil during the last 10 minutes to allow slight browning.
- Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley.
Notes
- Slice chicken against the grain to ensure tender, easy-to-eat pieces that stay moist during baking.
- Use fresh mushrooms for the best flavor, and don’t rush the sauteing process to develop deep, rich caramelization.
- Choose low-fat milk and cream alternatives if watching calories, but full-fat versions provide the most luxurious sauce texture.
- Let the casserole rest for 10 minutes after baking to help the sauce thicken and absorb flavors, making each bite more delicious.
