Instructions

  2. Roast sweet potatoes for 50-60 minutes until tender and caramelized. Remove from oven and let cool slightly.
  3. Reduce oven temperature to 375°F. Grease a 9×13-inch baking dish. Combine roasted sweet potatoes with ½ cup almond milk, 2 tsp vanilla extract, ¼ cup brown sugar, and ¼ cup maple syrup.
  4. Gently mix in ½ cup raisins and ½ tsp allspice. The mixture should have some chunks and some mashed potato texture.
  5. Spread the sweet potato mixture evenly in the prepared baking dish. Dot the surface with 2 tbsp cubed unsalted butter.
  6. In a separate bowl, mix 1 cup pecans with 2 tbsp maple syrup until pecans are well coated.
  7. Sprinkle the pecan mixture over the sweet potato base. Top with 1 cup marshmallows.
  8. Cover the casserole with foil and bake at 375°F for 15 minutes.
  9. Remove foil and continue baking for another 15 minutes until the top turns golden and marshmallows become gooey.
