Ingredients
Scale
Main Ingredients:
- 2 pounds ribeye steak
- 4 large russet potatoes
- 1 cup shredded cheddar cheese
Supporting Ingredients:
- ½ cup unsalted butter
- 4 cloves garlic
- 1 cup heavy cream
- ½ cup sour cream
Seasonings and Herbs:
- ¼ cup fresh chives
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
Instructions
- Crank the oven to a sizzling 400°F and grab your large baking dish.
- Boil the potato cubes in salted water for 15-20 minutes until they’re super soft when pierced with a fork.
- Drain the potatoes and dump them back into the pot. Mash in ¼ cup butter, 1 cup heavy cream, ½ cup sour cream, plus salt and pepper until super smooth.
- Heat a skillet to medium-high and melt the remaining ¼ cup butter. Toss in 4 minced garlic cloves and let them dance for 1-2 minutes.
- Drop your steak pieces into the fragrant butter. Sprinkle 1 teaspoon each of paprika and garlic powder, then season with salt and pepper.
- Sear the steak for 5-7 minutes until it’s beautifully browned and cooked to your preferred doneness.
- Spread half the creamy mashed potatoes across the bottom of your baking dish.
- Layer the seared steak over the potatoes and shower with half a cup of shredded cheddar.
- Cover with the remaining mashed potatoes and crown with another half cup of cheese.
- Slide the dish into the 400°F oven for 25-30 minutes until the cheese transforms into a bubbly golden blanket.
- Pull from the oven and shower with fresh chopped chives just before serving.
Notes
- Let the potatoes cool slightly after boiling to help them absorb butter and cream more effectively, creating an ultra-creamy texture.
- Choose a tender cut like sirloin or ribeye for the steak to ensure maximum flavor and tenderness in the final dish.
- Don’t overcook the steak in the skillet – aim for medium-rare, as it will continue cooking in the oven and can become tough if overcooked.
- For a lower-carb version, substitute cauliflower for potatoes and use full-fat Greek yogurt instead of sour cream to maintain rich flavor.
