Description

Cheesy White Bean Tomato Bake brings comfort straight from your kitchen to the table, warming your soul with simple, rustic ingredients. Creamy beans nestled under a golden cheese blanket make this dish a perfect weeknight dinner that feels like a warm hug.

Ingredients

Scale

Primary Ingredients:

  • 2 cans (15 oz each) white beans
  • 3 large tomatoes
  • 1 cup mozzarella cheese
  • ½ cup Parmesan cheese

Supporting Ingredients:

  • 1 small onion
  • 3 cloves garlic
  • 2 tablespoons olive oil

Seasoning Ingredients:

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt
  • Black pepper
  • Fresh parsley

Instructions

  1. Preheat the oven to 375°F and coat a 9×9-inch baking dish with cooking spray or butter to prevent sticking.
  2. Warm 2 tablespoons olive oil in a skillet over medium heat. Sauté the chopped onion for 4-5 minutes until it becomes soft and translucent.
  3. Add 3 minced garlic cloves to the skillet and cook for an additional 30-45 seconds, releasing their aromatic flavors.
  4. Transfer 2 cans of drained white beans into a large mixing bowl. Add the sautéed onion and garlic mixture.
  5. Incorporate 3 diced tomatoes or 1 can of drained diced tomatoes into the bean mixture. Season with 1 teaspoon dried oregano, 1 teaspoon dried basil, salt, and black pepper.
  6. Spread half of the bean and tomato combination across the bottom of the prepared baking dish.
  7. Sprinkle 12 cup of grated Parmesan and 12 cup of mozzarella cheese over the first layer.
  8. Add the remaining bean mixture as the second layer, then top with the final 12 cup of each cheese type.
  9. Slide the dish into the 375°F oven and bake for 25-30 minutes until the cheese turns golden and begins to bubble around the edges.
  10. Allow the casserole to rest for 5 minutes after removing from the oven. Garnish with chopped fresh parsley or basil before serving.

Notes

  • Fresh herbs make a big difference, so chop them just before adding for maximum flavor intensity.
  • Drain beans thoroughly to prevent excess liquid from making the casserole soggy and ensure a nice, creamy texture.
  • Select ripe, high-quality tomatoes for the most robust taste, and consider using fire-roasted canned tomatoes for extra depth.
  • When choosing cheese, grate your own mozzarella and Parmesan for better melting and a fresher result compared to pre-shredded versions.
