Instructions

  1. Melt ¼ cup butter in a large skillet over medium-high heat. Sauté 1 cup chopped onion and 2 teaspoons minced garlic until onions soften, about 5 minutes.
  2. Sprinkle ¼ cup flour into the skillet. Stir constantly for 2 minutes to create a roux that will thicken your sauce.
  3. Gradually pour 1 cup milk into the skillet. Add two 14.5-ounce cans of diced tomatoes and one 15-ounce can tomato sauce. Simmer for 5-6 minutes until sauce slightly thickens.
  4. Fold 3 cups chopped cooked chicken into the sauce. Mix in 3 cups mozzarella cheese, 1½ teaspoons salt, 1 teaspoon black pepper, and ½ teaspoon sugar.
  5. Stir in 1 pound cooked bow tie pasta until evenly coated with sauce and chicken.
  6. Transfer mixture to a nonstick-sprayed casserole dish. Scatter remaining 1 cup mozzarella cheese across the top.
