Description

Whipping up Poor Man’s Husband Casserole becomes a delightful weeknight dinner solution when your pantry feels sparse. Hearty layers of ground beef, noodles, and creamy sauce create a satisfying meal that stretches your budget without skimping on flavor.

Ingredients

Scale

Proteins:

  • 1.5 lbs Ground Beef
  • 8 oz Cream Cheese
  • 1.5 cups Cheddar Cheese

Pantry Staples:

  • 2 cans (15 oz. each) Tomato Sauce
  • 8 oz Egg Noodles
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Sugar
  • 2 teaspoons Minced Garlic
  • Salt and Pepper to taste

Dairy and Creamy Ingredients:

  • 8 oz Sour Cream

Instructions

  1. Heat the oven to 350°F and prepare a 9×13-inch baking dish with a light grease coating.
  2. Place 1.5 lbs of ground beef in a large skillet over medium-high heat. Cook until the meat is completely browned, then drain excess fat.
  3. Add 2 tsp minced garlic and 1 tsp Italian seasoning to the beef. Stir for about 30 seconds to release aromatic flavors.
  4. Pour 30 oz of tomato sauce into the skillet. Sprinkle 1 tsp sugar, salt, and pepper. Simmer the mixture for 3-5 minutes.
  5. In a separate bowl, blend 8 oz cream cheese and 8 oz sour cream until smooth and well combined.
  6. Cook 8 oz egg noodles in boiling water until al dente. Drain completely and set aside.
  7. Create the first layer in your baking dish with half of the cooked noodles, spreading them evenly across the bottom.
  8. Spread half of the cream cheese mixture over the noodle layer, ensuring complete coverage.
  9. Spoon half of the seasoned meat sauce on top of the cream layer.
  10. Repeat the layering process with remaining noodles, cream mixture, and meat sauce.
  11. Sprinkle 1.5 cups of cheddar cheese over the final layer.
  12. Bake at 350°F for 20-25 minutes until the cheese melts and turns golden.

Notes

  • Use lean ground beef to keep the dish lighter and reduce excess grease during cooking.
  • Ensure cream cheese and sour cream are at room temperature for smoother mixing and better blending with other ingredients.
  • For a gluten-free version, swap egg noodles with zucchini noodles or your favorite gluten-free pasta alternative.
  • When layering, press down gently between layers to help the casserole hold together and create a more cohesive texture.
