Description

Corn casserole delivers pure comfort straight from Grandma’s kitchen to your dinner table, packed with sweet corn and creamy goodness. Family members always ask for seconds of this simple, crowd-pleasing side dish that comes together in minutes.

Ingredients

Scale

Main Ingredients:

  • 1 can (15 oz) whole kernel corn
  • 1 can (15 oz) creamed corn
  • 1 box (8.5 oz) Jiffy corn muffin mix

Supporting Ingredients:

  • 2 large eggs
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese

Seasonings and Fats:

  • ½ cup butter, melted
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 350°F and generously coat a 9×13-inch baking dish with cooking spray or butter.
  2. Crack 2 large eggs into a spacious mixing bowl and whisk them until completely smooth.
  3. Pour ½ cup melted butter and 1 cup sour cream into the eggs and blend until the mixture looks uniform and creamy.
  4. Add 1 can of drained whole kernel corn and 1 can of creamed corn to the wet ingredients, stirring gently to combine.
  5. Empty the entire 8.5-oz box of Jiffy Corn Muffin Mix into the bowl, stirring just until the dry ingredients are moistened.
  6. If desired, sprinkle 1 cup of shredded cheddar cheese across the surface and fold into the mixture.
  7. Transfer the entire mixture to the prepared baking dish, spreading it evenly with a spatula.
  8. Slide the dish into the 350°F oven and bake for 45-50 minutes, watching for a golden-brown top and set center.
  9. Remove from the oven and let the casserole rest for 5 minutes before serving to help it stabilize.

Notes

  • Use room temperature ingredients for smoother mixing and better texture.
  • When folding cheese into the casserole, choose sharp cheddar for more intense flavor.
  • Check doneness by inserting a knife in the center – it should come out clean without wet batter.
  • For a gluten-free version, substitute the corn muffin mix with gluten-free cornbread mix and verify all ingredients are certified gluten-free.
