Description

Hobo Casserole delivers comfort straight from your kitchen with hearty ground beef, potatoes, and vegetables melding together in one satisfying dish. Simple ingredients and minimal prep make this classic family meal perfect for busy weeknights when deliciousness matters most.

Ingredients

Scale

Proteins:

  • 1.5 lbs ground beef
  • 1 (15 oz) can kidney beans
  • 1 cup shredded cheddar cheese

Vegetables and Aromatics:

  • 1 cup diced onions
  • 2 cloves garlic
  • 1 (15 oz) can corn
  • 1 (14.5 oz) can diced tomatoes
  • ¼ cup chopped fresh parsley

Seasonings and Liquids:

  • 1 cup beef broth
  • 1 cup uncooked rice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Grab a large skillet and brown 1.5 lbs ground beef over medium-high heat, crumbling it into small pieces for 7-8 minutes.
  2. Mix 1 cup diced onions and 2 minced garlic cloves into the beef, cooking until onions turn translucent, about 3 minutes.
  3. Drain all excess grease from the meat mixture using a colander, shaking out extra fat.
  4. Return meat to skillet and add 1 can kidney beans, 1 can corn, 1 can diced tomatoes, and 1 cup beef broth.
  5. Stir 1 cup uncooked rice, 1 tsp salt, and ½ tsp black pepper into the mixture until everything combines evenly.
  6. Transfer the entire mixture to a greased 9×13 inch baking dish, spreading it out smoothly.
  7. Cover the dish with aluminum foil and bake at 375°F for 45 minutes, ensuring rice absorbs all liquid.
  8. Pull out the casserole and sprinkle 1 cup shredded cheddar cheese across the top.
  9. Return to oven uncovered at 375°F for 10-15 minutes, watching cheese melt completely.
  10. Remove casserole from oven and let it rest for 5 minutes to settle and cool slightly.
  11. Garnish with ¼ cup chopped fresh parsley right before serving to add a fresh touch.

Notes

  • Choose lean ground beef to reduce excess fat and prevent a greasy casserole.
  • Rinse canned beans and corn to lower sodium content and control seasoning.
  • If short on time, substitute uncooked rice with pre-cooked rice and reduce baking time to 25-30 minutes.
  • For gluten-free version, ensure beef broth and canned ingredients are certified gluten-free.
