Description

Hobo Casserole brings hearty comfort straight from Grandma’s kitchen to your dinner table, with ground beef, potatoes, and veggies layered into a satisfying meal that feeds hungry families fast.

Ingredients

Scale

Main Protein:

  • 1 lb ground beef

Vegetables:

  • 3 cups thinly sliced potatoes
  • 1 small onion, diced

Dairy and Seasonings:

  • 1 ½ cups shredded cheddar cheese
  • ½ cup milk
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat your oven to exactly 375°F (190°C). Thoroughly coat a 9×13-inch baking dish with cooking spray.
  2. Grab a large skillet and cook 1 lb ground beef with 1 small diced onion over medium heat. Break meat into small crumbles until no pink remains. Drain away excess fat.
  3. Sprinkle 1 tsp garlic powder, 12 tsp salt, and 14 tsp black pepper over your browned meat. Stir to distribute seasonings evenly.
  4. Whisk 10.5 oz cream of mushroom soup with 12 cup milk in a separate bowl until completely smooth and no lumps remain.
  5. Arrange 112 cups thinly sliced potatoes as the first layer in your prepared baking dish. Spread half the seasoned beef over potatoes.
  6. Pour half the creamy soup mixture across the beef layer. Repeat layers with remaining potatoes, beef, and soup mixture.
  7. Distribute 112 cups shredded cheddar cheese across the top of the casserole, covering entire surface evenly.
  8. Cover dish tightly with aluminum foil. Bake at 375°F for 40 minutes, keeping foil in place.
  9. Remove foil and continue baking 15-20 minutes until potatoes turn tender and cheese transforms golden brown.
  10. Remove from oven and allow casserole to rest 10 minutes before serving. Garnish with fresh chopped parsley if desired.

Notes

  • Use a mandoline or sharp knife to slice potatoes uniformly, ensuring even cooking and a consistent texture throughout the casserole.
  • For a lighter version, swap ground beef for lean ground turkey and use low-fat cream of mushroom soup to reduce calories.
  • Experiment with different cheese varieties like Monterey Jack or Swiss to add unique flavor profiles to your casserole.
  • When draining beef, pat with paper towels to remove excess grease and prevent a soggy dish that lacks crisp edges.
