Instructions

  4. Drain excess fat from the meat mixture. Pour in 15 oz tomato sauce and optional 15 oz diced tomatoes. Season with 1 tsp Italian seasoning, salt, and pepper.
  5. Simmer the meat sauce for 5 minutes, allowing flavors to meld together.
  6. Whisk 1 cup sour cream and 1 cup cottage cheese in a separate bowl until smooth.
  7. Layer half the cooked pasta across the bottom of your prepared dish.
  8. Spread half the meat sauce evenly over the pasta layer.
  9. Dollop your sour cream mixture across the meat sauce, creating an even layer.
  10. Add remaining pasta on top, followed by remaining meat sauce.
  11. Sprinkle 2 cups shredded cheddar cheese across the entire casserole surface.
  12. Cover with foil and bake at 350°F for 20 minutes.
  13. Remove foil and continue baking 10-15 minutes until cheese melts and edges turn golden brown.
