Description

Sauerkraut casserole brings hearty German comfort right to your dinner table with layers of tangy cabbage and rich, savory meat. Packed with classic flavors and simple ingredients, this dish delivers a satisfying meal that warms your soul from the first delicious bite.

Ingredients

Scale

Protein:

  • 1 lb ground beef

Supporting Vegetables:

  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups sauerkraut, drained and rinsed

Dairy and Seasonings:

  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • ½ cup shredded cheddar cheese
  • 1 teaspoon caraway seeds
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F. Coat a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Sauté 1 finely chopped onion until translucent, about 4 minutes.
  3. Add 2 minced garlic cloves to the skillet. Cook for 30 seconds until fragrant.
  4. Incorporate 1 pound ground beef into the skillet. Break meat into small crumbles while cooking for 6-7 minutes.
  5. Drain excess fat from the beef. Sprinkle 1 teaspoon paprika, salt, pepper, and 1 teaspoon caraway seeds over the meat. Mix thoroughly.
  6. Spread 2 cups drained and rinsed sauerkraut evenly across the bottom of the prepared baking dish.
  7. Distribute the seasoned beef mixture over the sauerkraut layer, creating an even coverage.
  8. Gently spread 1 cup sour cream across the beef using the back of a spoon.
  9. Scatter 1 cup shredded mozzarella cheese over the sour cream layer.
  10. Top the casserole with ½ cup shredded cheddar cheese.
  11. Cover the dish with aluminum foil. Bake at 375°F for 20 minutes.
  12. Remove foil and continue baking for an additional 10-15 minutes until cheese turns golden and bubbly.
  13. Remove from oven and let the casserole rest for 5-10 minutes before serving.

Notes

  • Use fresh, high-quality sauerkraut for the best tangy flavor and crisp texture in your casserole.
  • Drain the sauerkraut thoroughly to prevent excess liquid from making the dish watery.
  • For a lighter version, substitute ground turkey or plant-based ground meat instead of beef.
  • Choose full-fat sour cream for a richer taste, but low-fat options work well for a healthier twist.
