Description

Crispy hashbrown breakfast casserole delivers pure morning comfort straight from your kitchen to the table. Cheesy eggs, savory sausage, and golden potato shreds combine for a hearty breakfast that’ll make everyone rush to the breakfast nook.

Ingredients

Scale

Main Proteins:

  • 1 pound cooked sausage, crumbled
  • 6 large eggs

Starches and Dairy:

  • 1 package frozen hashbrowns (30 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup milk

Vegetables and Seasonings:

  • ½ cup diced onion
  • ½ cup diced bell pepper
  • Salt and pepper to taste

Instructions

  1. Prepare your oven and grab a 9×13 inch baking dish. Grease the dish thoroughly to prevent sticking. Heat the oven to 350°F.
  2. Crumble 1 pound of sausage completely and chop ½ cup of onions and ½ cup of bell peppers into small, uniform pieces.
  3. Empty the entire 30 oz package of frozen hashbrowns into a large mixing bowl. Add the chopped vegetables and crumbled sausage. Mix these ingredients until well distributed.
  4. Crack 6 large eggs into a separate bowl. Pour in 1 cup of milk and add salt and pepper to taste. Whisk the mixture until the eggs are completely blended and smooth.
  5. Pour the egg mixture over the hashbrown combination. Stir everything together so each ingredient is evenly coated.
  6. Transfer the entire mixture into your prepared baking dish, spreading it out to create an even layer across the pan.
  7. Sprinkle 1 cup of shredded cheddar cheese across the top of the casserole, covering the surface completely.
  8. Place the baking dish in the preheated oven. Bake for 45-50 minutes, watching for a golden-brown top and checking that the center is set and firm.

Notes

  • Fresh hashbrowns create the best texture, so shred potatoes right before mixing for maximum crispness.
  • Drain sausage thoroughly to prevent excess grease from making the casserole soggy.
  • For a vegetarian version, swap sausage with mushrooms or plant-based protein crumbles.
  • Customize the cheese by using pepper jack for extra kick or a blend of cheeses for deeper flavor.
