Description

Hash Brown Chicken Casserole layers creamy potatoes, tender chicken, and plenty of cheese into pure comfort. It’s the kind of dish that warms the table and fills everyone up.

Ingredients

Scale

Main Ingredients:

  • 2 lbs frozen hash brown potatoes
  • 2.5 cups roasted or rotisserie chicken
  • 2 cups breadcrumbs

Supporting Ingredients:

  • 1 cup frozen peas
  • 1 cup frozen carrots
  • 1 can cream of chicken soup
  • 1.5 cups sour cream yogurt
  • 0.5 cups milk

Seasoning Ingredients:

  • 2 cups shredded cheddar cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F, ensuring the rack is positioned in the center for even cooking.
  2. Empty the 2 lbs of frozen hash brown potatoes into a large mixing bowl, allowing them to start thawing slightly.
  3. Pour the entire can of cream of chicken soup and 1 ½ cups of sour cream yogurt into the bowl with the potatoes.
  4. Add ½ cup of milk, 2 ½ cups of roasted chicken, 1 cup of frozen peas, and 1 cup of frozen carrots to the mixture.
  5. Sprinkle salt and pepper generously across the ingredients, then thoroughly blend everything until well combined.
  6. Transfer the entire mixture into a 9×13 inch baking dish, spreading it evenly to ensure consistent cooking.
  7. Slide the casserole into the preheated 400°F oven and bake for 40-45 minutes until the edges start to bubble.
  8. Remove the casserole and immediately scatter 2 cups of breadcrumbs across the top.
  9. Return the dish to the oven and continue baking for another 5-7 minutes until the breadcrumbs turn golden brown and crispy.
  10. Remove from the oven and let the casserole rest for 5 minutes before serving to allow the ingredients to settle.

Notes

  • Shred the hash browns fresh for the best texture and crispiness in the casserole.
  • Drain excess moisture from potatoes to prevent a soggy bottom and ensure a crisp top layer.
  • For a gluten-free version, swap regular breadcrumbs with gluten-free panko or crushed gluten-free crackers.
  • Add extra flavor by mixing in sharp cheddar or pepper jack cheese with the chicken for more depth.
