Side Vegetables:
- 1 medium onion
- 3 cloves garlic
- 1 red bell pepper
- 1 green bell pepper
- 1 cup corn
Supporting Ingredients:
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans
- 2 cups shredded cheese
- 1 tablespoon olive oil
- Chili powder (to taste)
- Cumin (to taste)
Instructions
- Gather and chop your medium onion, 3 garlic cloves, red and green bell peppers into uniform pieces using a sharp knife.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 lb ground beef and cook for 5-7 minutes, breaking meat into small crumbles until no pink remains.
- Toss chopped onion and minced garlic into the browned beef. Saute for 3-4 minutes until onions turn translucent.
- Introduce chopped bell peppers to the skillet. Cook for another 3-4 minutes until vegetables soften slightly.
- Pour in 1 can of diced tomatoes, 1 can of drained kidney beans, and 1 cup corn. Sprinkle with chili powder and cumin to taste. Simmer mixture for 5 minutes, stirring occasionally.
- Transfer beef mixture to a greased 9×13-inch baking dish. Spread evenly and top with 1 cup shredded cheese.
- Cover casserole with aluminum foil and bake at 350°F for 20 minutes. Remove foil, scatter remaining 1 cup cheese across surface, and bake uncovered for additional 10-15 minutes.
- Remove casserole from oven and rest for 5 minutes before serving to allow flavors to settle and dish to cool slightly.
Notes
- Swap ground beef with ground turkey or plant-based crumbles for a lighter or vegetarian version of this hearty casserole.
- Enhance flavor by adding a dash of smoked paprika or a splash of Worcestershire sauce when cooking the beef.
- For a spicier kick, include diced jalapeños or a pinch of red pepper flakes during the sautéing stage.
- Prep ingredients ahead of time to make assembly faster and simplify weeknight cooking.
