Instructions

  1. Prepare sweet potatoes by piercing each potato 5-6 times with a fork and placing them on a baking sheet at 400°F for 45-50 minutes until completely soft.
  2. Remove sweet potatoes from oven and let them cool for 10 minutes until comfortable to handle.
  3. Place a medium skillet over medium heat and melt 2 tablespoons butter until it starts to bubble.
  4. Add 1 diced apple, 1 cup cranberries, ¼ teaspoon nutmeg, ½ teaspoon cinnamon, and a small pinch of salt to the melted butter.
  5. Sauté the fruit mixture for 5-7 minutes, stirring occasionally, until cranberries begin to pop and release their juices.
  6. Pour 2 tablespoons maple syrup into the skillet and cook for an additional 2 minutes, then remove from heat.
  7. Slice each sweet potato lengthwise and carefully scoop out the interior, leaving a thin shell to maintain structure.
  8. Mash the scooped sweet potato flesh in a bowl and fold in half of the warm fruit mixture.
  9. Refill each potato skin with the mashed sweet potato and fruit mixture.
  10. Sprinkle the remaining fruit mixture on top of each stuffed potato.
  11. Return the stuffed potatoes to the 400°F oven and bake for 10-12 minutes until thoroughly heated.
