Instructions
- Boil 6 oz of egg noodles in salted water for 7-8 minutes until al dente. Drain completely and set aside in a colander.
- Heat a large skillet over medium-high heat. Cook 1 pound ground beef and 1 small diced onion for 6-7 minutes, stirring frequently until meat browns completely.
- Drain excess fat from the skillet. Add 1 cup frozen vegetables, 1 tsp garlic, and 1 tsp Italian seasoning. Stir for 2 minutes.
- Pour in 8 oz tomato sauce and 14 oz diced tomatoes. Season with salt and pepper. Simmer mixture for 4-5 minutes.
- Preheat your oven to 350°F. Grease a 9×13 inch casserole dish with cooking spray.
- Create first layer by spreading half the cooked noodles across the bottom of the dish. Top with half the beef mixture.
- Sprinkle 1 cup shredded cheddar cheese over the first layer. Repeat with remaining noodles and beef mixture.
- Cover the casserole with aluminum foil. Bake for 20 minutes at 350°F.
- Remove foil and sprinkle remaining 1 cup cheddar cheese on top. Bake uncovered for 5 more minutes until cheese melts completely.
- Remove from oven and let stand for 5 minutes before serving to help casserole set.
