  • ⅓ cup milk

Instructions

  1. Heat a skillet to medium temperature. Crumble 1 pound ground beef and cook until completely browned, ensuring no pink remains.
  2. Drain excess fat from the skillet. Pour in 1 packet taco seasoning and ½ cup water. Simmer for 2–3 minutes.
  3. Add 1 can drained corn, 1 can rinsed black beans, and 1 cup salsa. Mix thoroughly and simmer another 3–4 minutes.
  4. Preheat your oven to 375°F. Grease a 9×9-inch baking dish with cooking spray or butter.
  5. In a separate bowl, whisk 1 egg with ⅓ cup milk. Add 1 box Jiffy cornbread mix and stir until just combined.
  6. Spread the meat mixture evenly across the bottom of the prepared baking dish.
  7. Sprinkle 1½ cups shredded cheese over the meat mixture.
  8. Carefully pour cornbread batter on top, spreading gently to cover completely.
  9. Bake for 25–30 minutes until cornbread turns golden and a toothpick comes out clean.
  10. During the final 5 minutes, scatter remaining ½ cup cheese on top and return to oven until melted.
  11. Remove from oven and let the casserole rest 5–10 minutes before serving.
