Meat Mixture:
- 1 pound ground beef
- 1 can 15 ounces corn
- 1 can 15 ounces black beans
- 1 packet taco seasoning
- ½ cup water
- 1 cup salsa
Cornbread Layer:
- 1 box Jiffy cornbread mix
- 1 egg
- ⅓ cup milk
Toppings:
- 2 cups shredded cheddar cheese
- Optional: chopped green onions
- Optional: diced jalapenos
- Optional: sour cream
- Optional: avocado
Instructions
- Heat a skillet to medium temperature. Crumble 1 pound ground beef and cook until completely browned, ensuring no pink remains.
- Drain excess fat from the skillet. Pour in 1 packet taco seasoning and ½ cup water. Simmer for 2–3 minutes.
- Add 1 can drained corn, 1 can rinsed black beans, and 1 cup salsa. Mix thoroughly and simmer another 3–4 minutes.
- Preheat your oven to 375°F. Grease a 9×9-inch baking dish with cooking spray or butter.
- In a separate bowl, whisk 1 egg with ⅓ cup milk. Add 1 box Jiffy cornbread mix and stir until just combined.
- Spread the meat mixture evenly across the bottom of the prepared baking dish.
- Sprinkle 1½ cups shredded cheese over the meat mixture.
- Carefully pour cornbread batter on top, spreading gently to cover completely.
- Bake for 25–30 minutes until cornbread turns golden and a toothpick comes out clean.
- During the final 5 minutes, scatter remaining ½ cup cheese on top and return to oven until melted.
- Remove from oven and let the casserole rest 5–10 minutes before serving.
- Optional: Garnish with green onions, jalapeños, sour cream, or avocado.
Notes
- Let the casserole rest for at least 5-10 minutes after baking to help it set and make serving easier.
- Drain ground beef thoroughly to prevent a watery or greasy final dish.
- Choose your favorite salsa style (mild, medium, or hot) to customize the flavor profile to your taste.
- For a gluten-free version, swap the Jiffy mix with a gluten-free cornbread mix and check taco seasoning ingredients.
