Description

Feta Potatoes roast golden and deliciously creamy right in your oven, bringing Mediterranean comfort to your dinner table with minimal effort and maximum flavor.

Ingredients

Scale

Primary Ingredients:

  • 2 large baking potatoes
  • 1 200g block of feta

Seasoning Ingredients:

  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red chili flakes

Garnish and Flavor Enhancers:

  • 1 head of garlic
  • 1 lemon
  • 1 tablespoon honey
  • 0.25 cup fresh basil

Instructions

  1. Heat the oven to 390F and gather a large baking dish that fits all ingredients comfortably.
  2. Scrub the potatoes clean, then chop into 1-inch uniform cubes.
  3. Place potato cubes in a saucepan, cover with cold water, and boil for exactly 7 minutes until slightly softened.
  4. Drain potatoes completely and let them steam dry for 3 minutes to remove excess moisture.
  5. Transfer potato cubes to the baking dish and coat with 2 tablespoons olive oil, 1 teaspoon dried thyme, 1 teaspoon dried oregano, 1 teaspoon salt, and 1 teaspoon black pepper.
  6. Spread potatoes in a single layer and roast at 390F for 35 minutes, stirring once halfway through to ensure even browning.
  7. Remove the dish and nestle the entire 200g feta block right in the center, flipping it to catch some seasonings.
  8. Cut the top off the garlic head, exposing the cloves, and place it beside the feta.
  9. Return the dish to the oven for another 15 minutes at 390F until feta softens and potatoes turn golden brown.
  10. Remove roasted garlic and squeeze the soft cloves from their skin, mashing them with the side of a knife.
  11. Squeeze half a lemon over the potatoes and feta, then mix in the mashed garlic and ¼ cup fresh basil.
  12. Drizzle 1 tablespoon honey across the dish and sprinkle remaining fresh basil on top.
  13. Serve immediately while everything is warm and crispy.

Notes

  • Par-boiling potatoes before roasting helps create an extra crispy exterior while keeping the inside soft and fluffy.
  • Dipping the feta into seasonings before placing it on the tray adds an extra layer of flavor to the cheese.
  • Letting the roasted garlic cool slightly before mashing allows for easier handling and more intense flavor development.
  • For a dairy-free version, swap feta with a plant-based cheese alternative or omit cheese entirely and use nutritional yeast for a similar savory profile.
