Instructions
- Heat the oven to 390F and gather a large baking dish that fits all ingredients comfortably.

- Place potato cubes in a saucepan, cover with cold water, and boil for exactly 7 minutes until slightly softened.
- Drain potatoes completely and let them steam dry for 3 minutes to remove excess moisture.
- Transfer potato cubes to the baking dish and coat with 2 tablespoons olive oil, 1 teaspoon dried thyme, 1 teaspoon dried oregano, 1 teaspoon salt, and 1 teaspoon black pepper.
- Spread potatoes in a single layer and roast at 390F for 35 minutes, stirring once halfway through to ensure even browning.
- Remove the dish and nestle the entire 200g feta block right in the center, flipping it to catch some seasonings.
- Cut the top off the garlic head, exposing the cloves, and place it beside the feta.
- Return the dish to the oven for another 15 minutes at 390F until feta softens and potatoes turn golden brown.
- Remove roasted garlic and squeeze the soft cloves from their skin, mashing them with the side of a knife.
- Squeeze half a lemon over the potatoes and feta, then mix in the mashed garlic and ¼ cup fresh basil.
- Drizzle 1 tablespoon honey across the dish and sprinkle remaining fresh basil on top.
- Serve immediately while everything is warm and crispy.
