Instructions

  1. Crush 1 bag of Doritos into coarse pieces, setting aside some for topping. Spread the crushed chips evenly across a 9×13 inch baking dish.
  2. Brown 1 pound ground beef in a skillet at medium-high heat for 7-8 minutes, breaking meat into small crumbles.
  3. Stir 1 packet of taco seasoning and ¾ cup water into the beef. Simmer for 3-4 minutes until sauce thickens.
  4. Combine 1 can diced tomatoes, 1 can drained black beans, and 1 cup sour cream with the seasoned beef mixture.
  5. Pour the entire beef mixture over the crushed Doritos, spreading it into an even layer.
  6. Sprinkle 1 cup shredded cheese across the entire surface, covering all areas completely.
  7. Bake at 350°F for 25-30 minutes until cheese melts and edges turn golden brown.
  8. Remove from oven and immediately scatter ½ cup chopped green onions across the top.
  9. Let casserole rest for 5 minutes before serving to allow layers to set.
