Ingredients
Scale
Protein:
- 2 cups shredded cooked chicken
Dairy:
- 1 cup shredded cheddar cheese
- 1 cup sour cream
Base and Seasoning:
- 1 (9.75 oz) bag Doritos Nacho Cheese chips, crushed
- 1 (10.75 oz) can cream of chicken soup
- 1 (10 oz) can diced tomatoes with green chilies
- ½ cup chopped onion
- 1 teaspoon garlic powder
- Salt
- Pepper
Instructions
- Warm your oven to precisely 375°F and coat a 9×13 inch baking dish with cooking spray to prevent sticking.
- Toss 2 cups shredded chicken, 10.75 oz cream of chicken soup, 10 oz diced tomatoes with green chilies, 1 cup sour cream, ½ cup cheddar cheese, and 1 teaspoon garlic powder into a large mixing bowl. Season generously with salt and pepper.
- Crush an entire 9.75 oz bag of Doritos Nacho Cheese chips. Spread half the crushed chips across the bottom of your prepared baking dish.
- Pour your chicken mixture directly over the first layer of crushed Doritos, ensuring even coverage.
- Scatter remaining crushed Doritos across the top of the mixture, creating a crunchy layer.
- Sprinkle the final ½ cup of cheddar cheese over the Doritos to create a golden, melty topping.
- Slide the casserole into the 375°F oven and bake for exactly 30 minutes until the cheese transforms into a bubbling, golden blanket.
- Remove from the oven and allow the casserole to rest for 5 minutes, which helps the layers set and makes serving easier.
Notes
- Crush Doritos just before layering to keep them crisp and prevent sogginess in the casserole.
- Swap regular Doritos with Spicy Nacho flavor for extra kick, or use Cool Ranch for a different flavor profile.
- For a lighter version, substitute low-fat cream of chicken soup, reduced-fat sour cream, and part-skim cheese to cut calories.
- Choose rotisserie chicken for maximum flavor and easiest preparation, shredding meat while still warm for best texture.
