Description

Roasted Potatoes deliver crispy, golden perfection straight from your oven to the dinner table. Seasoned with herbs and a touch of olive oil, these simple spuds will become your new favorite side dish.

Ingredients

Scale

Main Ingredients:

  • 5 red potatoes

Supporting Ingredients:

  • ¼ cup Parmesan cheese
  • 1 medium onion

Seasoning Ingredients:

  • 2 tablespoons mayonnaise
  • 1 teaspoon dill
  • 1 teaspoon garlic powder
  • Salt
  • Pepper

Instructions

  1. Microwave 5 medium red potatoes in a covered dish for 6-7 minutes on high. Use oven mitts when handling, as steam can cause burns. Gently separate potatoes if they stick together.
  2. Whisk 2 tablespoons mayonnaise with 1 teaspoon dill and 1 teaspoon garlic powder in a mixing bowl. Thoroughly coat potatoes with this seasoned mixture.
  3. Coat a baking dish with non-stick spray. Spread the seasoned potatoes and 1 medium chopped onion across the dish. Sprinkle with salt and pepper to your taste.
  4. Roast at 425°F for 20-25 minutes, turning potatoes halfway through cooking. Watch for golden brown, crispy edges as your indicator of doneness.
  5. Remove potatoes from oven and immediately scatter ¼ cup Parmesan cheese over the top. Gently toss to distribute cheese evenly and serve hot.

Notes

  • Microwaving potatoes before roasting helps them cook faster and become more tender inside while getting crispy on the outside.
  • Using mayonnaise as a coating creates a rich, golden-brown crust that adds extra flavor and helps the seasonings stick to the potatoes.
  • Turning the potatoes halfway through baking ensures even browning and prevents one side from burning while the other remains pale.
  • For a lighter version, swap mayonnaise with Greek yogurt or substitute olive oil, which can reduce calories while maintaining a crispy texture.
