Instructions

  1. Warm your oven to 350°F and coat a 9×13-inch baking dish with cooking spray.
  2. Combine 2 cups shredded chicken, 10.5 oz cream of chicken soup, ½ cup sour cream, ½ cup milk, drained Rotel, 1 cup cheddar cheese, ½ cup Monterey Jack, and seasonings in a large mixing bowl.
  3. Crush 3 cups of Cool Ranch Doritos and sprinkle 1 cup across the bottom of your prepared baking dish.
  4. Spread half the chicken mixture directly over the first layer of crushed chips.
  5. Add another 1 cup of crushed Doritos across the chicken mixture.
  6. Pour the remaining chicken mixture over the second Doritos layer.
  7. Top the casserole with the final 1 cup of crushed Doritos and a light sprinkle of extra cheese.
