Instructions
- Heat the oven to 500°F. Coat a 9×13 glass baking dish with nonstick spray to prevent sticking.
- Mix ⅓ cup olive oil, 2 tsp salt, 1 tsp pepper, 1 tbsp paprika, 2 tbsp garlic powder, 1 tbsp onion powder, and 4 tbsp hot sauce in a large mixing bowl.
- Add 8 peeled and cubed russet potatoes to the sauce. Toss gently to coat, ensuring each potato piece gets seasoned evenly.
- Transfer potatoes to the prepared baking dish, letting excess sauce remain in the bowl. Spread potatoes in a single layer for even cooking.
- Bake potatoes at 500°F for 45 minutes, stirring every 15 minutes to ensure all sides get crispy and golden.
- While potatoes cook, add 3-4 cubed chicken breasts to the remaining sauce in the bowl. Toss to coat thoroughly, adding extra hot sauce if desired.
- In a separate small bowl, combine 1 cup sliced scallions with 3 cups shredded cheese. Set aside for topping.
- After 45 minutes, remove potato pan from the oven. Top potatoes with marinated chicken pieces in an even layer.
- Sprinkle the cheese and scallion mixture over the chicken, covering the entire surface.
- Return casserole to the oven. Bake at 500°F for an additional 15 minutes until chicken is fully cooked and cheese melts completely.
- Remove from oven and let rest for 5 minutes. Garnish with extra scallions and serve with a dollop of sour cream on the side.
