Description

Loaded Potato and Chicken Casserole turns classic comfort flavors into one hearty dish. Creamy potatoes, tender chicken, and cheese come together beautifully.

Ingredients

Scale

Main Ingredients:

  • 8 russet potatoes
  • 34 chicken breasts
  • 3 cups shredded cheese

Seasonings and Spices:

  • ⅓ cup olive oil
  • 2 teaspoons salt
  • 1 teaspoon ground pepper
  • 1 tablespoon paprika
  • 2 tablespoons garlic powder
  • 1 tablespoon onion powder

Toppings and Additions:

  • 4 tablespoons hot sauce
  • 1 cup scallions
  • 1 cup sour cream

Instructions

  1. Heat the oven to 500°F. Coat a 9×13 glass baking dish with nonstick spray to prevent sticking.
  2. Mix ⅓ cup olive oil, 2 tsp salt, 1 tsp pepper, 1 tbsp paprika, 2 tbsp garlic powder, 1 tbsp onion powder, and 4 tbsp hot sauce in a large mixing bowl.
  3. Add 8 peeled and cubed russet potatoes to the sauce. Toss gently to coat, ensuring each potato piece gets seasoned evenly.
  4. Transfer potatoes to the prepared baking dish, letting excess sauce remain in the bowl. Spread potatoes in a single layer for even cooking.
  5. Bake potatoes at 500°F for 45 minutes, stirring every 15 minutes to ensure all sides get crispy and golden.
  6. While potatoes cook, add 3-4 cubed chicken breasts to the remaining sauce in the bowl. Toss to coat thoroughly, adding extra hot sauce if desired.
  7. In a separate small bowl, combine 1 cup sliced scallions with 3 cups shredded cheese. Set aside for topping.
  8. After 45 minutes, remove potato pan from the oven. Top potatoes with marinated chicken pieces in an even layer.
  9. Sprinkle the cheese and scallion mixture over the chicken, covering the entire surface.
  10. Return casserole to the oven. Bake at 500°F for an additional 15 minutes until chicken is fully cooked and cheese melts completely.
  11. Remove from oven and let rest for 5 minutes. Garnish with extra scallions and serve with a dollop of sour cream on the side.

Notes

  • Marinate the chicken in the sauce while the potatoes bake to infuse maximum flavor into the meat.
  • For a spicier version, add extra hot sauce or sprinkle red pepper flakes before the final cheese layer.
  • Swap out regular potatoes with sweet potatoes for a nutrient-rich alternative that adds a subtle sweetness.
  • Make this dish gluten-free by ensuring all seasonings and cheese are certified gluten-free.
