Instructions
- Warm your oven to 375F. Generously coat a 9×13-inch baking dish with cooking spray or butter.
- Brown 1 lb ground beef with 1 small chopped onion in a large skillet over medium heat for 6-8 minutes. Drain any excess fat.
- Add 2 minced garlic cloves, 1 tsp dried thyme, salt, and pepper to the beef. Sauté for another minute.
- Whisk 10.5 oz cream of mushroom soup with ½ cup milk in a separate bowl. Stir in ¾ cup shredded cheddar cheese.
- Arrange a layer of 4 thinly sliced russet potatoes and 2 optional sliced carrots across the bottom of your prepared dish.
- Spread half the seasoned beef mixture over the potato layer. Pour half the soup mixture on top.
- Create a second layer with remaining potatoes, carrots, beef, and soup mixture.
- Sprinkle the final ¾ cup of cheese across the top of the casserole.
- Cover the dish with foil and bake at 375F for 45 minutes.
- Remove foil and continue baking for 15-20 minutes until cheese turns golden and potatoes feel tender.
- Allow the casserole to rest for 10 minutes before serving to help it set and cool slightly.
